Cabbage soup

Similar to the Cabbage soup diet, this recipe packs a filling dose of veggies and water.  We added some white kidney beans to satisfy the protein needs of active vegetarian's.  The recipe is simple and surprisingly tasty and satisfying.  Enjoy!  :)

Ingredients:
10 cups of water
5 vegetable boillon cubes
1 packet of lipton onion soup mix
1 bag of frozen green beans
1 bag of frozen cauliflower
1 bag of frozen brocolli
1whole head of shredded green cabbage
2 cans of cannelli beans (white kidney beans)

Instructions:
Place all of the ingredients into a large soup pan, bring to a boil then let simmer for about 60 minutes (or longer), the soup will smell great and taste even better.

Nutrition (recipe makes 4 large bowls of soup):
300 calories, 2 grams of fat, 40 grams of carbohydrates, and 12 grams of protein!

  1. Mmm, soup. How big are the bags of frozen vegetables, and what size head of cabbage did you use? I find these things to vary quite a bit. Thanks!

    1. Absolutely! The bags of veggies are about a lb each, and I usually use the pre shredded cole slaw prepared package of cabbage, it is about 16 oz as well.
